Vegan Mac and Cheese
During the Holiday it's very important that I can take part in Holiday Dinner. So it was only right that I mastered bringing the Soul to the table the vegan way.
Here is the recipe to my favorite dish of the holiday. Macaroni & Cheese.
Super simple and easy, if you have cooked Macaroni & cheese before it's really no different except using vegan substitutes, and your more than welcome to add your on touches to this recipe to make your own master pan of vegan Macaroni & Cheese.
Here is the ingredients
3 cups of macaroni
3 1/2 cups of almond milk unsweetened
2 bags of shredded Cheddar cheese
1 bag of mozzarella shredded cheese
1 block of mild cheddar cheese
Directions: Preheat oven to 350* , Boil water enough for 3 cups of macaroni, Once noodles are tender remove from water and drain.
Set to side, in a pot, cut up the block of cheddar into small pieces and add 1 cup of almond milk. You want to melt the cheddar to a cheese sauce leaving some really small chunks of the cheddar in the sauce just to add texture and more flavor to the macaroni that will melt when you bake it.
When done, set to side.
In a mixing bowl add noodles, the two bags of shredded cheddar ( leave just a small amount behind to be able to sprinkle on top right before you put the pan in the oven to bake. Add the one bag of mozzarella to the mixture , pour in the cheese sauce, and the 3 1/2 cups of unsweetened almond milk. ( it may help to pour in cups slowly as you mix the macaroni to make sure you get the right consistency, add more or less if need.)
Lastly, time to season, Honestly it's all about seasoning to taste. I can tell you to add so many table spoons and teaspoons of seasoning but when cooking soul food its all about gut, instinct , and taste.
So add seasoning to "liking" start sprinkling in with small amounts and add more as you go.
When done, top it off with the rest of the cheddar shreds. Place in Oven and cook for 40 mins. Then Macaroni has and golden layer on top and cheese is melted, its all done ! and enjoy
