Lentil "Meat" Loaf Recipe

 

Going into the holiday season I wanted to come up with something that would be savory and fulling. So i put a spin on the classic Meatloaf the Vegan way made with Lentils, Walnuts, and veggies.

Ingredients:

1 Cup Walnuts

1 Cup of Lentils 

1/2 cup of chopped carrots

2/3 cup chopped celery

Dice Half a Medium Onion ( sweet or white onion)

Dice 1/2 cup of each (red and green Bell Peppers OR half bag of frozen mixed Bell Peppers (add more or less on preference)

4 Pieces of toasted bread 

1 tbsp of minced garlic (3-4 cloves)

 

Seasoning:

1 tsp Cumin

1 tsp garlic powder

1 tsp seasoning salt

1 tsp black pepper

1 tsp poultry seasoning 

( add more or less to liking)

1/2 cup of bbq or ketchup 

 

Directions:

  1.  Preheat oven to 375*
  2. Cook lentils ( follow instructions)
  3. Dice veggies, toast bread
  4. When lentils are done cooking put in  blender or nutribullet with walnuts and garlic and onions. 
  5. place in bowl add celery and carrots , spices, bbq or ketchup, and toasted bread (crumble into mixture)
  6. Give it a good mix, than scoop out mixture into a baking pan and mold to the shape of a meatloaf loaf 
  7. Place in oven and cook for 45 mins, add sauce of choice ( gravy, ketchup, bbq sauce) and cook for an additional 15 mins. 
serve and enjoy!
