Fried Mushrooms (Gluten Free) | Spring Rolls ( Gluten Free) & and Sweet Spicy Korean Sauce

Fried Mushrooms has become an ultimate favorite of mine since giving up meat and Spring Rolls is just an easy way for me to make sure im adding some vegetables in a meal. Let me show you the perfect "easy" way to make Fried Mushrooms topped off with a sweet spicy Korean sauce inspired by Gas Oakley > Avantgardevegan a vegan chef from London.
 
Fried Mushrooms this is what you will need:
 
  • Portabella mushrooms
  • Almond milk (or any other diary sub)
  • seasonings of choice ( Garlic salt, Garlic powder, pepper, salt, old bay, Lawyers seasoning)
  • Panko Crumbs (gluten free)
  • Vegetable oil
 
Directions :
 
Heat up your Vegetable oil in a sauce pan ( fill the pan half way with oil). If your mushrooms aren't already sliced you want to slice them into 1/2 inch slices to mimic the shape of (chicken tenders). To get the best flavors with every bite, pour 1 cup of flour into a bowl. Seaon your flour really good, than add almond milk, whisk as you go to get a nice smooth batter consistency. From there dip your mushrooms one by one into the batter than transfer them to the Panko. Once they are nicely coated put them into the hot oil to fry. Once there are nicely golden on one side, flip them, and repeat.
 
 
Spring Rolls this is what you will need:
 
 
  • Rice Paper ( gluten free)
  • Vegetables of choice ( bell peppers, roman lettuce, cucumber , avocado, celery, carrots, etc.) Get creative.
  • Sushi Rice
  • Sushi Rice Vinegar
 
Directions:
 
Boil some water and cook sushi rice accordingly, add sushi Rice Vinegar.
Once sushi is done cooking set aside to cool. The sushi rice should have a nice sticky consistency.
 
Once the Sushi Rice is cooled. Take your rice paper and dip it in luke warm water until it becomes translucent est. 3-5 seconds. Spread unto a flat surface or ( cutting board) and rice and vegetables, roll up the vegetables and rice, as you roll tuck in the sides before the roll is completed. (similar to how you would roll a burrito).
Sweet and Spicy Korean Sauce what you will need:
 
  • Brown Sugar
  • soy sauce
  • Sweet cooking rice wine
  • maple syrup or honey
  • Gochujang hot pepper paste
  • Red Pepper flakes ( Gochugaru)
  • Orange
  • Ginger
  • Vegetable stock
  • garlic
 
Directions:
 
Mince your garlic , Cut up your fresh ginger into slices about 1 table spoon and 1/2 full. In a sauce pan add 1/3 cup of soy sauce, garlic, 6 oz of brown sugar, 1/3 cup of sweet cooking rice wine, add maple syrup to liking, 2 table spoons of gochujang or add to taste (warning : very hot), 1 table spoon of Gochugaru ( taste as you add also very hot), squeeze half of a large orange or 2 small oranges. vegetable stock (eye ball) based on preferred consistency and taste, add ginger. Let simmer until the sauce has become a consistency of like a teriyaki sauce.
